The grapes come from 65-year-old estate vines. Old vines produce fewer grapes and put more of themselves into each cluster — more concentration, more depth, more of what makes Saperavi worth drinking. Classical fermentation in stainless steel preserves the purity of the fruit. Then 18 months in mature French oak barrels — not new oak, mature oak. The difference matters. New oak can overwhelm. Mature oak whispers. A gentle vanilla, a softness around the edges, a velvety texture that the standard Saperavi does not have.
Dark cherry, plum, blackberry. The tannins are present but polished. The finish is long and warm.

Vinified by classical method in stainless steel tanks. Aged in oak barrels for 18 months
