Rkatsiteli Qvevri Koncho&Co
Rkatsiteli is the king of Georgian white grapes. The most widely planted, the most ancient, the variety that carried Georgian white winemaking through centuries of history including the Soviet era when most other grapes did not survive.
Here it is made the way Georgians have always made it. The grapes go into a qvevri buried underground together with their skins, seeds, and stems. Six months of fermentation in darkness. Wild yeast only. Nothing added. No commercial yeasts. No sugar. No intervention of any kind.
What the qvevri method does to the king of whites is remarkable. The same grape that makes a crisp, mineral, refreshing white in the European style becomes something completely different here. Deep amber in color. Dried apricot, quince, a mineral earthiness that comes from the clay vessel and the underground. Tannic and structured like a red wine. A long finish with green tea and dried fruit that stays long after the glass is empty.
Two wines, one grape, one method older than history. The comparison between Rkatsiteli White and Rkatsiteli Qvevri is one of the best introductions to what Georgian winemaking actually is.
